Day 4:
Gram’s CheeseCake:
Graham Cracker Crust:
1 and 1/4 cup crumbs
1/4 cup sugar
1/4 cup butter
Mix ingredients together into small crumbs (I like to use a pastry blender)
place in bottom of spring pan and pat down to form crust.
24 Oz Cream Cheese
1 Cup Sugar
3 Tablespoons flour
7 Eggs (separate the whites from the yolks)
1 Pint Sour Cream
In food processor:
Whip together the cream cheese, sugar, and flour.
Add in the egg yolks.
Next add in the sour cream.
Beat the egg whites stiff and fold into the batter.
Pour into 10" spring pan onto the graham cracker crust.
Bake one hour at 325 degrees.
Turn oven off and leave the cheesecake inside for an additional 1/2 hour with door closed.
Open oven door and leave cheesecake in over with door open for last 1/2 hour.
Cool on baking rack. Place in refrigerator once it is cool.

IceCream cake:
1 Gallon Vanilla Ice Cream (softened)
1 Gallon Chocoalte Ice Cream (softened)
Oreo’s or chocolate wafter cookies (or your favorite cookie!)
Chocolate Fudge in a squeeze bottle
Vanilla Frosting
1. In a springform pan, spread one of the gallons of the ice cream (in this case, chocolate) so it creates an even layer.
2. Crush a sleeve of oreos or chocolate cookies and sprinkle on top of the first layer of ice cream
3. Squeeze the chocolate fudge over the cookies to create an even layer of chocolate.
4. Put the springform pan into the freezer for the first layer of icecream to harden a bit (this makes it much easier to add the second layer!)
5. Once the ice cream is fairly firm, spread the second layer of ice cream (vanilla in this case) and return the pan to the freezer
6. Once the cake is firm, spread the vanilla frosting over the top and decorate with whole cookies
7. Return the pan to the freezer to freeze over night (or better yet for a few days!)
8. When ready to serve, run a knife along the edge of the pan and remove the sides from the spring form pan
9. ENJOY!!!!!!
**Be creative! This can be make with any flavor of ice cream with any flavor of cookie and sauce in the middle (ie .caramel)
***Make at least 24hours before you need the cake! If you do not allow the cake to harden for at least 24 hours, it will begin to melt the minute you take it out of the freezer to serve it!!
Day 8:
Old Fashioned Sugar Cookies:
Snickerdoodle Cookies:
2 3/4 cups all purpose flour
1/2 teaspoon salt
2 teaspoons baking powder
1 cup unsalted butter, room temperature
1 1/2 cups granulated white sugar
2 large eggs
1 teaspoon pure vanilla extract
Coating:
1/3 cup granulated white sugar
2 teaspoons ground cinnamon
Snickerdoodles: In a large bowl whisk together the flour, salt, and baking powder.
In the bowl of your electric mixer (or with a hand mixer), beat the butter and sugar until smooth (about 2 to 3 minutes). Add the eggs, one at a time, beating well after each addition. Scrape down the sides of the bowl. Beat in the vanilla extract. Add the flour mixture and beat until you have a smooth dough. If the dough is soft, cover and refrigerate until firm enough to roll into balls (one to two hours).
Preheat oven to 400 degrees F and place rack in the center of the oven. Line two baking sheets with parchment paper.
Shape the dough into 1 inch round balls.
Coating: In a large shallow bowl mix together the sugar and cinnamon.
Roll the balls of dough in the cinnamon sugar and place on the prepared pan, spacing about 2 inches (5 cm) apart. Then, using the bottom of a glass, gently flatten each cookie to about 1/2 inch (1.5 cm) thick.
Bake the cookies for about 8 - 10 minutes, or until they are light golden brown around the edges. Remove from oven and place on a wire rack to cool.
Can store in an airtight container, at room temperature, for about 10 - 14 days.
Makes about 6 dozen cookies.

Gram’s Shortbread Cookies:
¼ lb butter
1/b lb margarine
2 c. flour
1 tbl cornstarch
½ c. sugar
Cream butter and sugar, knead in flour until smooth. Press with hand into small cakes- about ¼ inch thick. Prick with fork and bake 300 degree oven about 30 minutes, or until light brown. Sprinkle w/ sugar while hot.
Roll w rolling pin, cut with cookie cutters dipped in flour (12-15 min)

1 cup salted butter (2 sticks)
½ c. Sugar
Unsalted saltines
Semi sweet chocolate chips
Walnuts (optional)
1. Line crackers on a cookie sheet
2. Heat butter and sugar over medium heat until the butter melts and it comes to a slow boil
3. Pour sugar over crackers and place in 375 oven for 10 minutes or until golden brown
4. Sprinkle the chocolate chips over the top and put in the oven until the chips melt a bit. Spread chips in even layer and sprinkle with walnuts (optional).
5. Refrigerate until hard and cut to serve.
